Spinach Pesto

The jumbo bag of spinach at Costco is such a great deal, that I can’t pass it up. But, it’s a challenge to get through the bag before it goes bad. I was very excited to try this Giada recipe that Kari forwarded to me. It’s from her cookbook Everday Italian which comes highly recommended. Plus, Kari said all of her kids loved it (Oh, my hopes were raised so high that I would find a dish the whole family would eat). This is a super simple recipe. I just wish it used more spinach!
